Here is what you can 'undo' in the file editor.

When you're in a field and have changed the data in it, you can press the ESC key on your keyboard to undo the text changes. If you made a change in a field or two and have tabbed across the record, those changes aren't logged to the database until you've either pressed the ENTER key or exited that record by clicking to another record. While still on that record, once you've made a data change and are tabbing across, the 'undo' button will be activated and when pressed will undo all changes made on that record.

Remember you can turn on an audit log for a user in the User Access screen so you can see what the old value was if you need to manually re-enter it. Also, via the Tools menu in the File Editor, there is an Undelete option which can be very handy if you deleted records that shouldn't have been deleted.
